Product Description

The inner and outer walls of the cavity of γ-cyclodextrin have completely different properties due to the different groups on the glucose molecules: the outer wall is hydrophilic, and the inner wall is lipophilic. It is this "two-sidedness" that enables γ-cyclodextrin to build a bridge between oil and water that is difficult to dissolve in each other, thus exerting its unique magical effect.

Product Application

γ-cyclodextrin adjusts bitterness by encapsulating catechins, and its excellent encapsulation technology is widely used in food to improve smell and taste. "Catechins" in green tea have antioxidant properties, can neutralize harmful free radicals, and help control weight and cholesterol levels. But high levels of catechins make beverages bitter, and usually require a lot of sugar to improve the taste, which is contrary to the concept of healthy eating.

However, this problem is cleverly solved by using γ-cyclodextrin. Catechins are encapsulated in the inner cavity of cyclodextrin, and the bitterness can be easily removed or reduced by adjusting the amount of cyclodextrin added without adding sugar.

The unique molecular structure of cyclodextrin gives it excellent encapsulation technology, which can effectively cover up unpleasant tastes or odors, making people almost unable to feel their presence, and thus widely used as a fragrance agent in various foods and beverages.
