Alpha Cyclodextrins is a cyclic oligosaccharide composedwith 6 glucose units. lts cavity diameter is about 0.47-0.53 nm,which is the smallest "molecular capsule" in the three natural cy-clodextrins.
Due to its small cavity structure, Alpha Cyclodextrins ismainly used for inclusion of small molecule compounds. lt couldincrease the stability, solubility and control the release of guestmolecules. lt also could be used as dietary fiber, antioxidant andemulsification etc, which has been widely used in functional foodand health products.
