    Alpha amylase is extracted from Bacillus subtilis through deep fermentation and can hydrolyze starch into various types of dextrins, as well as small amounts of low molecular weight sugars such as glucose and maltose. Thus, the viscosity of starch dextrin rapidly decreases, playing a role in liquefying starch, and is applied in industrial fields such as starch processing, food and beverage, textile, papermaking, fermentation, etc.


Thermal stability: The effective temperature range is 35-90 ℃, and it is relatively stable below 60 ℃. The optimal operating temperature is 60-70 ℃, and it can be applied to liquefaction processes up to 90 ℃.


PH stability: relatively stable at pH 5.0-6.0.
